Low-Carb & Nutritious: Healthy Pumpkin Muffins for Children with Diabetes

 Managing a child’s blood sugar levels shouldn't mean missing out on the cozy flavors of autumn. For our Brave Little Warriors, we’ve reimagined the classic pumpkin muffin. By removing flour and refined sugar, we’ve created a treat that prioritizes stability without compromising on that 'Mama Muse' aesthetic. These muffins are packed with fiber and healthy fats to ensure every bite is as safe as it is delicious.

Ingredients 


  • 200g Finely Grated Raw Pumpkin 

  • 1 Large Organic Egg 

  • 50ml Low-fat Kefir 

  • 3-4 tbsp Whole Grain Semolina 

  • 1 tsp Baking Powder

  • Spices: Ground Cinnamon & Natural Vanilla Extract 

  • Diabetic-safe sweetener (Stevia or Erythritol)

  • A handful of crushed Walnuts 


Cooking Instructions 


  1. Preparation: Preheat your oven to 180°C. Lightly grease your muffin tin or use silicone molds.

  2. Combine the Base: In a medium bowl, whisk the egg with the kefir and your chosen sweetener.

  3. Mix in the Pumpkin: Stir in the finely grated pumpkin, vanilla, and cinnamon.

  4. Add the Dry Ingredients: Gradually add the semolina and baking powder. Stir until just combined.

  5. The Resting Secret: Crucial Step! Let the batter sit for 10–15 minutes. This allows the semolina to absorb the moisture from the pumpkin and kefir, ensuring the muffins are soft, not grainy. 

  6. Final Flourish: Gently fold in the crushed walnuts.

  7. Bake: Divide the batter into the molds and bake for approximately 30 minutes, or until a toothpick comes out clean.

"The Glucose Buffer:" When baking for a child with diabetes, adding crushed walnuts isn't just for the crunch. The healthy fats and protein in the nuts help slow down the digestion of the carbohydrates in the pumpkin and semolina.
