Fluffy Fish Soufflé Recipe: High-Protein Healthy Lunch for Picky Toddlers

Struggling to get your little ones to eat more fish and veggies? This light, airy Salmon & Cauliflower Bake is the perfect "hidden-veggie" solution that looks beautiful on the plate and tastes even better.

The Ingredients (5-6 Servings)

500g Salmon Mince (fresh and high-quality)

8 Large Eggs (Grade C1)

200-250g Cauliflower (finely grated)

50ml Heavy Cream (for a silky finish)

10g Butter (to grease the dish)

5g Salt (use less if your salmon mince is pre-salted)

Optional Spices: 2g Cumin & 1g Anise (for a gourmet aroma)

Topping: 10g Almond flakes or Sesame seeds

To Serve: Fresh Lemon wedges

Cooking Instructions

Prep the Base: Preheat your oven to 180°C. Finely grate the cauliflower using a coarse grater and lightly grease your baking dish with butter.

Whip the Eggs: Separate the egg whites from the yolks. Whisk the whites with a pinch of salt until they form stiff, airy peaks. In a separate bowl, lightly beat the yolks with the heavy cream and spices.

Mix the Flavors: Stir the salmon mince and grated cauliflower into the yolk mixture until well combined.

The Secret Step: Gently fold the whipped egg whites into the salmon mixture using a spatula. Use a "bottom-to-top" motion to keep the air inside—this ensures the soufflé stays fluffy!

Bake: Pour into your dish, sprinkle with almond flakes, and bake for 35–45 minutes until golden brown and risen.

Serve: Let it cool slightly, then serve with a fresh squeeze of lemon to brighten the flavors.

This Salmon & Cauliflower Soufflé proves that healthy eating doesn't have to be a struggle. It’s a sophisticated, protein-packed meal that simplifies your lunch routine while nourishing your family.
