Ingredients:

  • For the Low-GI Crust:

    • 180g Low-fat Cottage Cheese (Curd)

    • 10g Wheat or Oat Bran (for essential fiber)

    • 70g Whole Grain Rolled Oats

    • A pinch of Natural Vanilla Extract

    • Diabetic-safe sweetener (e.g., Stevia) to taste

  • For the Creamy Berry Filling:

    • 180g Smooth Cottage Cheese

    • 1 Large Organic Egg

    • Diabetic-safe sweetener

    • A handful of fresh, antioxidant-rich Berries (Blueberries or Raspberries)

Steps:

  1. Foundation: Mix the cottage cheese, bran, and oats for the crust. Add vanilla and sweetener.

  2. Texture Control: Pulse with a blender just enough to combine. Keeping the oat texture coarse is key for a lower Glycemic Index. 🌪️

  3. Shape & Pre-bake: Press into a mold and bake at 180°C for 10 minutes.

  4. Filling: Blend the remaining cheese with the egg and sweetener. Fold in the berries gently.

  5. Final Touch: Pour over the base and bake for 30 more minutes at 180°C.

Culinary Tip for Diabetic Safety:

"The Fiber Guard:" To minimize blood sugar spikes, always opt for coarse, whole-grain oats rather than instant varieties. The more 'work' the body has to do to break down the fiber, the more stable the energy release. For an extra cooling summer treat, serve chilled!
