Veggie Pasta Magic: 4 Quick & Healthy Recipes
Pasta doesn't have to be heavy to be delicious! These four vegetable-forward pasta recipes are perfect for those evenings when you want a warm, comforting meal that’s still packed with nutrients. Each dish focuses on fresh seasonal vegetables, vibrant herbs, and simple sauces that come together in less than 20 minutes. Healthy, colorful, and family-friendly!
1. Lemon Zest Zucchini Linguine
Light, citrusy, and perfect for a quick dinner.
Ingredients:
250g Linguine or Spaghetti
2 medium zucchinis (thinly sliced or spiraled)
2 cloves garlic, minced
Sauce: 3 tbsp olive oil, zest and juice of 1 lemon, grated Parmesan, fresh parsley.
Method:
Boil the pasta in salted water until al dente.
While pasta cooks, sauté garlic and zucchini in olive oil for 3-4 minutes until tender.
Toss the cooked pasta into the pan with zucchini.
Add lemon juice, zest, and parsley. Serve with a generous sprinkle of Parmesan.
2. Creamy Spinach & Cherry Tomato Penne
A colorful Mediterranean delight with a silky finish.
Ingredients:
250g Penne pasta
1 cup cherry tomatoes, halved
2 large handfuls of fresh baby spinach
Sauce: 2 tbsp cream cheese (or heavy cream), 1 tbsp pesto, a splash of pasta water.
Method:
Cook the penne. Reserve half a cup of pasta water before draining.
In a pan, lightly blister the tomatoes in olive oil, then add spinach until wilted.
Stir in cream cheese and pesto, adding pasta water to create a smooth sauce.
Mix in the pasta and coat thoroughly.
3. Roasted Bell Pepper & Basil Fusilli
Sweet roasted peppers paired with aromatic basil.
Ingredients:
250g Fusilli (spirals)
2 bell peppers (red and yellow), sliced into strips
1 red onion, sliced
Sauce: Olive oil, dried basil, red pepper flakes for a hint of heat.
Method:
Roast or sauté peppers and onions until they are soft and slightly caramelized.
Boil the fusilli until ready.
Combine pasta with the vegetables.
Season with olive oil, plenty of dried basil, and salt. Top with toasted pine nuts if desired.
4. Garlic Broccoli & Mushroom Farfalle
Earthy mushrooms and crunchy broccoli for a satisfying texture.
Ingredients:
250g Farfalle (bow-tie pasta)
1 small head of broccoli, cut into tiny florets
200g mushrooms (cremini or button), sliced
Sauce: Butter, 3 cloves of garlic, soy sauce (optional for umami), black pepper.
Method:
Steam broccoli florets for 3 minutes until bright green.
Sauté mushrooms in butter and garlic until golden brown.
Mix the steamed broccoli, sautéed mushrooms, and cooked farfalle together.
Add a dash of soy sauce or salt and lots of freshly ground black pepper.
