Step-by-Step Instructions
Prep the Oven: Preheat your oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners or grease it lightly with coconut oil.
Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and cinnamon.
Mix the Wet Ingredients: In a separate medium bowl, mash the banana until smooth. Whisk in the egg, melted coconut oil, maple syrup (or honey), and vanilla extract. Stir in the finely grated carrots.
