Easy No-Bake Desserts for Kids with Diabetes
As mamas, we always want to treat our little ones to something sweet, but keeping it healthy and low-glycemic can sometimes feel like a challenge — especially for kids with diabetes. The good news? You don’t even need to turn on the oven to create beautiful, delicious, and blood-sugar-friendly desserts.
Today, I’m sharing two simple and low-carb treats that your kids will absolutely love, made with wholesome ingredients that keep energy levels stable.
1. Creamy Coconut & Berry Popsicles
These popsicles taste like a creamy summer dream. Creamy coconut milk provides healthy fats, which slow down the absorption of any natural sugars from the berries.
Ingredients: 1 can of full-fat coconut milk, a handful of fresh organic raspberries or blueberries, and a few drops of liquid stevia or monk fruit sweetener (optional).
How to make:
Blend the coconut milk with your sugar-free sweetener of choice until smooth.
Drop a few whole or lightly crushed berries into your favorite silicone popsicle molds.
Pour the coconut milk over the berries.
Freeze for at least 4 hours.
2. Vanilla & Raspberry Panna Cotta
This sugar-free twist on the classic Italian dessert is incredibly velvety and light. By using heavy cream (or coconut cream) and a keto-friendly sweetener, we get a luxury texture that won't cause any blood sugar spikes.
Ingredients: 1 cup of heavy cream (or full-fat coconut cream), 1 cup of unsweetened almond milk, 1 tablespoon of unflavored gelatin powder, 2–3 tablespoons of powdered erythritol or monk fruit sweetener, 1 teaspoon of pure vanilla extract, and a handful of fresh raspberries for the top layer.
How to make:
Pour the almond milk into a small saucepan, sprinkle the gelatin powder on top, and let it sit for 5 minutes to bloom.
Place the saucepan over low heat. Add the heavy cream, vanilla extract, and sweetener. Stir gently until the gelatin and sweetener are completely dissolved (do not let it boil!).
Pour the smooth mixture into small glass jars or clear cups, leaving some space at the top.
Place them in the fridge for 3–4 hours until set.
Right before serving, mash or blend the fresh raspberries with a tiny drop of your sugar-free sweetener and gently spoon this vibrant pink layer over the chilled panna cotta.
