Fluffy Yogurt Soufflé Cake | Melt-in-Your-Mouth Healthy Dessert
Looking for a guilt-free, cloud-like dessert that both you and your little ones will adore? This Healthy Yogurt Soufflé is incredibly soft, creamy, and made with simple ingredients. It has the texture of a gentle cheesecake but is much lighter. A perfect sweet treat for a weekend brunch or a cozy afternoon tea.
Ingredients:
400g (14 oz) Thick Greek yogurt (plain or vanilla, unsweetened)
4 large Eggs (separated into yolks and whites)
40g (3 tbsp) Cornstarch
50g (1/4 cup) Honey, maple syrup, or organic sugar (adjust to taste)
1 tsp Pure vanilla extract
A pinch of Salt
Fresh berries or a dust of powdered sugar for serving (optional)
Instructions:
Preheat & Prep: Preheat your oven to 160°C (320°F). Line a 6-inch (15 cm) cake pan with parchment paper (both bottom and sides, leaving some overhang as the soufflé will rise).
Mix the Base: In a large bowl, whisk together the egg yolks, Greek yogurt, cornstarch, vanilla extract, and honey (or sugar) until completely smooth and free of lumps.
Whip the Egg Whites: In a separate, squeaky-clean bowl, add the egg whites and a pinch of salt. Whip using a mixer until stiff, glossy peaks form.
Fold with Love: Gently fold the whipped egg whites into the yogurt mixture in three separate batches. Use a spatula and move in slow, circular motions from bottom to top to keep all the air inside the batter.
Bake: Pour the fluffy batter into the prepared pan. Bake at 160°C (320°F) for about 40–45 minutes until the top is golden and the center has a slight, gentle jiggle.
Cool & Serve: Turn off the oven and leave the door slightly ajar for 10 minutes to let the soufflé cool down slowly (this prevents it from collapsing too fast). Chill in the fridge for at least 1–2 hours before serving. Top with fresh raspberries or blueberries.
